Matt is determined to one day make Harper a Cleveland Browns fan. My plan is to encourage this so that she will watch football with dad on Sunday and I can shop and run errands....good plan huh???
Everyone that knows me, knows that I don't like football. The only thing that I like about football season is the food. I love to crockpot cook, throw something in the crockpot and let it cook all day. The menu for the first Browns game of the season was grilled chicken wings, burgers, and nachos...we didn't get to the burgers because we were to full from the wings and nachos. Matt is a great wing griller, so it was hard to just eat a couple. I am not able to eat dairy so finding a nacho recipe was tough, but we found a few and took a little from each one. The best was the I had everything in the cupboard. The nachos turned out to be soooooo good, I have decided to share. They are so easy, just open some cans.
Shredded Chicken Nachos:
2 Chicken Breast
1 taco pack
1 can Pinto Beans (can use black beans also)
1 can Rotel
a few jalapenos- add to taste
corn
diced tomatoes- I used 1/2 can
Put all of the ingredients in the crockpot and let cook for 6-8 hours. The chicken will pull apart in while cooking. You can add sour cream and cheese if you want, but I didn't since no dairy allowed. The scoops tortilla chips work the best.
I am still eating the dip for lunch, but putting it in a tortilla wrap, like a taco.
